先來兩款小吃,這個「醬漬牡蠣一口飯」(HK$68/2件)我本人是大推!濃厚味的醬油漬牡蠣,鹹鹹甜甜的滋味,少許的青瓜片減低膩感作平衡,我覺得有點像我們的金蠔,但味道更鮮。旁邊兩桌看起來好年輕的 IG Foodie Dee Dee 妹妹,忙著拍照連紫菜都軟掉了。我是老人才不管這些,卡嚓卡嚓就拍完,快吞轟才是王道!看著美食怎麼回捨得看著它的紫菜變軟。

答案是藏在這個湯底裡!與一般的油膩厚重豬骨湯底不同,由米芝蓮星級廚師 山本敦之 先生親身研製,以牡蠣作主調的「牡蠣黃金湯」,每日新鮮使用數十斤優質鮮蠔, 經過低溫慢數小時慢煮熬製而成。整體味道清爽,是很適合夏天特別是香港氣候的拉麵。

其他的食材包括有慢煮叉燒(個人覺得有點太薄),自家鮮製日本牡蠣醬(圖中央)、火箭菜、紫洋蔥及烤紅椒,就連鮮蠔油也是每日自家新鮮煉製,誠意十足。香港人慣吃重口味料又多的拉麵,但牡蠣不如帰的拉麵,湯頭才是主角,店員還特地囑咐,要在碗內的不同角度都試一下,果然每一口因不同的食材配合,每一口都有不同的味道,但一碗的拉麵都有不同的牡蠣鮮味層次體驗。
而香港店更是全線引入日本ACM淨水設備將食水過濾,以保持湯底品質,令味道可以更貼近日本風味。
